(Ethyl Acetate) processing (aka \"The Natural Decaffeination Method\") is done at the origin and starts by fermenting molasses derived from sugar cane to create an alcohol. This alcohol is then mixed with acetic acid to form ethyl acetate. In Colombia, where a lot of sugar cane is grown, this naturally occurring solvent makes sense to complement their thriving coffee-growing\/processing industry. E. A is commonly found in wine, beer, fruit, vegetables, and other food and beverages.\u003cbr data-mce-fragment=\"1\"\u003eFirst, the coffee is steamed to open up its pores. Next, the E.A. is applied via water, dissolving the green seeds' caffeine. Then, the caffeine is separated and filtered from the tank. Finally, the now-decaffeinated seeds are steamed again to remove any residual E.A. before being dried and shipped. This method avoids excessive heat or pressure, which can radically disrupt a green seed's cellular structure. One downside of this process is that since the pores of the seed are opened up through steaming, the coffee does tend to age more quickly (both as roasted and green) than our regular single-origin offerings. With the help of three producer leaders and our importing partner, Mountain Harvest, the Makali farmers have access to a drying shed, pulping facility, and clean water for coffee processing. Some farmers in the Makali Community have been using a pulping and drying facility provided by Mountain Harvest and received training and support to learn this processing stage and produce high-quality parchment. They took over the Dumerso washing station in 2010, breathing new life into a place that had been closed for years since its construction in 1998. Since they reopened in 2013, they have been committed to producing exceptional, value-added coffees.\u003c\/p\u003e\n\u003cp\u003eEach cherry is handpicked with care, ensuring that only the ripest, reddest fruits reach the Dumerso washing station. Once they arrive, the cherries are thoroughly inspected and spread out on raised beds to dry. The team works diligently, raking the cherries frequently to guarantee they dry evenly. They even cover the cherries during the hottest parts of the day and overnight to prevent any moisture build-up. Once picked at peak ripeness from the producers' farms, the cherries are floated to remove damaged or underripe seeds and are de-pulped on the same day. The de-pulped coffee undergoes dry fermentation for 30 hours in concrete tanks or plastic barrels placed in the shade. After fermentation, it is washed with clean water and then dried on raised beds inside solar dryers for an average of 25 days.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eOur inspiring long-time importer, Semilla, operates in small villages along the Montecillos mountain range in La Paz and Comayagua, where coffee cultivation has long been the primary income for these smallholder communities of growers and producers. Unfortunately, as is the case in these regions, small-scale producers often sell their coffee cherries to intermediaries, receiving low prices that hinder reinvestment in their farms, families, and community.
