It's named after the community's cliffside setting and signifies the progress and determination required to grow coffee in such rugged terrain. With the help of three producer leaders and our importing partner, Mountain Harvest, the Makali farmers have access to a drying shed, pulping facility, and clean water for coffee processing. Some farmers in the Makali Community have been using a pulping and drying facility provided by Mountain Harvest and received training and support to learn this processing stage and produce high-quality parchment. The decision to process the coffee themselves instead of selling the cherry to be processed stems from the fact that having processed parchment provides tangible savings for the farmers' families. After washing, the cherries are transported to La Luna, the highest dry mill in the world, located 3,600 meters above sea level. At La Luna, the beans undergo controlled anaerobic fermentation, which removes oxygen and enriches the aromas. He gets up very early, prepares breakfast for his pickers, and they harvest at the field. At 4 p.m., they collect and select the cherries. At 8 p.m., Silverio delivers the cherries to the beneficio.\u003c\/p\u003e\n\u003cp\u003e\u003cem\u003eProcessing\u003c\/em\u003e\u003cbr\u003eOnce received at the Caranavi mill, the cherries are pulped and placed in a stainless steel vat. This equipment allows fermentations to be carried out with a very high degree of control. The air inlet was blocked, and the seeds fermented with the mucilage for two days. After 24 hours, the grains are washed and passed through mechanical dryers until the humidity level reaches 11%.
